Southern Cross® is a highly versatile dual-purpose hop prized for its smooth bittering qualities and vibrant citrus character. Delivering alpha acid levels typically between 11-14%, it combines brewing efficiency with a refined balance of flavour and aroma, making it a valuable addition across a wide range of beer styles.
Its aroma profile is marked by bright lemon zest, fresh citrus peel, and subtle pine notes, layered over a clean, delicate spice character. Supported by an exceptional essential oil composition and naturally low cohumulone levels, Southern Cross consistently produces a smooth, rounded bitterness with remarkable balance and drinkability.
As an early kettle addition, it provides a firm yet elegant bitterness with a gentle resinous quality that integrates seamlessly into the finished beer. When used later in the brewing process, its aromatic oils reveal a more expressive side, showcasing lively citrus, pine, and spice notes. Whirlpool, hop-back, and dry-hop additions can further intensify these characteristics, creating bold and distinctive hop-forward beers.
"A hop with many talents."
Thanks to its combination of high alpha acids, generous oil content, and soft bitterness, Southern Cross adapts effortlessly to both subtle and assertive brewing applications. It performs equally well in crisp citrus-driven lagers, balanced pale ales, and intensely aromatic modern craft beers, whether used as a standalone feature hop or as part of a broader hop blend.
A true all-rounder, Southern Cross delivers versatility, balance, and unmistakable New Zealand hop character from brewhouse to glass.
